• Hey guys and happy Food Friday! Hope everyone is good? Tonight on the menu is Quorn sausage and chilli bean casserole. For any of you who follow my blog, you will know I love tomato-based dishes and I don’t eat meat. Hence all the Quorn dishes. However, if you would prefer to use ‘real’ sausages, I have adapted step 1 just for you :)

    So, let's get cracking with this tasty spicy little number...

    You will need:
    4 Quorn sausages
    Onion (chopped)
    Garlic clove (crushed)
    Small chilli (chopped)
    Chopped tomatoes (400g tin)
    Chili beans (290g tin)
    Tomato puree (generous squeeze)
    1 tbsp Worchester Sauce
    Red wine (generous splash)
    1 tbsp of dried herbs
    Dried hot paprika (shake to taste)
    Cracked black pepper
    2 dried bay leaves (for presentation)

    1.       Dry fry the onion, garlic and chilli in a frying pan for a few minutes to release the intense flavours. Keep stirring to ensure the onions don’t burn. (If you are using real sausages, you will need to add them here with a little Olive oil and fry gently for around 10 minutes).

    2.       Then add the Quorn sausages, chopped tomatoes, chilli beans, a generous squeeze of tomato puree, Worchester Sauce, a splash of red wine, and a quick shake of the hot paprika and the dried herbs.

    3.       Cover the mixture loosely with a lid and let it cook through on a really low heat for about 20 minutes. Be so careful not to let the sauce dry out though.

    4.       Season with cracked black pepper and serve with rice, couscous or crusty bread. I whipped up some tasty sweet potato mash. Enjoy!
