• Hi guys! welcome to this weeks Food Friday :) Ok so technically speaking I know that minced beef makes Cottage Pie and minced lamb makes Shepherds Pie, but I always have to be different and I'm using Quorn Mince! 



    I felt the need for a healthier version tonight. I usually pop grated cheese over the mash, but I've been eating way too much cheese this week! 


    You will need: 

    Quorn Mince 
    3 medium potatoes (chopped)
    1 medium onion (chopped)
    1 garlic clove (chopped)
    1 small green chilli (if you want add a spicy kick)
    1 tbsp olive oil
    Half a tin of chopped tomatoes
    Generous splash of red wine
    Squirt of tomato puree
    Milk (for mashing the mashed potatoes)
    Knob of butter (for the mashed potatoes)
    Salt and black pepper for seasoning

    Cheese to top before putting under the grill (if you prefer it cheesy)


    Directions:

    1. Heat 1 tbsp oil in a frying pan and quickly fry off the onion, garlic and chilli until slightly golden. Then add the peppers, chopped tomatoes, tomato puree and red wine, along with the Quorn mince to the pan to cook through. I usually leave this for around 25-30 minutes on a low heat to soak up all the gorgeous flavours.

    2. After about 15 minutes of the mince cooking. Cook the potatoes in a little salt for 10 minutes, or until tender. Once tender, drain the potatoes. Then mash together with a knob of butter, a splash of milk and season with cracked black pepper. 

    3. Once the mince mixture and the potatoes are ready. Pop the grill on to warm up.

    4. Spoon the mince mixture into an ovenproof dish and layer on the mashed potato.

    5. Pop under the grill for around 5-10 minutes, or until the mash is browned.


    Serves: 2 as a main course.
