So, you guessed it, whenever I had guests over, I made it!
Consequently, I haven't made tuna pasta bake for years. We were having one of those reminiscing chats, as you do, the other day and I thought it needs to be made once again. It is such a easy dish to put together, yet so yummy!
1 tsp of olive oil
1 garlic clove (chopped)
1 small chilli (chopped)
Half an onion (chopped)
1 tin of tuna (120g)
Half a tin of sweetcorn (100g)
1 tin of chopped tomatoes
The crisps on the top gives it that gorgeous extra cripsy crunch, mixed with
the cheese! Mmmm, ok so, I'm in food heaven right now :)
So, let's get cracking...

You will need:
150g of dried pasta1 tsp of olive oil
1 garlic clove (chopped)
1 small chilli (chopped)
Half an onion (chopped)
1 tin of tuna (120g)
Half a tin of sweetcorn (100g)
1 tin of chopped tomatoes
Tomato puree
Generous splash of red wine
A little shake of dried Hot Paprika ( I just used the Schwartz one)
Grated cheese for the top (as generous as you like)
1 bag of ready salted crisps (crushed)
2. Whist the pasta is cooking. Into a frying pan put the garlic, chilli and onion into fry off in the olive oil for a few minutes.
3. To the garlic, chili and onion mix. Add the chopped tomatoes, a generous squeeze of tomato puree, a splash of red wine, and a quick shake of the hot paprika. Heat all this through on a really low heat for about 15 minutes. Be so careful that the sauce doesn't dry out though, as there is such a fine line between the sauce being deliciously infused with all the flavours and it going too dry and horrible
4. Once cooked, drain the water from the pasta. Then add the tomato sauce mixture, the tuna and sweetcorn to the pan and mix it all together.
5. Then transfer the completed mixture into an ovenproof dish. Over the top of the tuna pasta mix, add some of the grated cheese. Crumble over the ready salted crisps, then add more cheese over the top.
Directions:

6. Pop the mixture under the grill for about 5 minutes, or until the cheese browns.
7. Serve with a crispy salad and enjoy!
