Hello and welcome to 'Food Friday'. The temperature has really dropped the past few days and it's raining outside, so I am definitely feeling it is time for some yummy comfort food!
Instead of my usual Friday night curry, I opted for one of my other favourite dishes, fish pie. I have adapted this recipe over the years from what I think was originally a Jamie Oliver recipe.
You will need:

2 salmon fillets
2 cod fillets
2 carrots
1 medium onion

Self-raising flour
Frozen garden peas
Frozen spinach
Frozen prawns
Pepper to season

Method:
Firstly, cover the salmon and cod
fillets with milk. Bring to the boil and simmer for 10 minutes.
Cook the carrots and onion in olive oil until soft on a low heat.
Let's get the hob action going. So, we have the fish on, the potatoes
boiling, the carrot mix softening, then put the broccoli on.
Once the carrots and onions have softened. To the pan add a heaped table spoon of self-raising flour and a heaped teaspoon of mustard.
Then add all the milk from the salmon and cod pan and bring to the boil, then gently simmer whilst the sauce thickens.
At this point you will need to preheat oven to gas mark 5/190c or 170 for fan assisted ovens.
To the pan add the frozen garden peas, spinach, prawns and season with pepper (you could also add salt). Also add the cod and salmon.
Meanwhile mash the potatoes with milk. I personally don't, but you can also add a knob of butter to taste.
